This recipe is from the bar of my best friend's kitchen, Abby.
- 1 cup honey
- 3 cups water
- 2 pears: peeled, cored and diced
- 1 large chunk ginger, peeled and diced
- 20+ fresh sage leaves
- 1 bottle champagne
- Bring honey and water to boil until honey dissolves.
- Add pears, sage and ginger, allow to steep.
- Add 1 to 2 tbsp to glass.
- Top with champagne.
